Lynda’s Wedding Cake – You can do it.

(In addition this makes a great Christmas Cake – Just put some royal icing on top and any other christmas icing decorations).   Royal icing is made by combining egg white with icing sugar, you can buy it ready made and roll it out use jam to fix it to the cake and/or you can buy the ready mix powder royal icing mix.

Ever thought about making a wedding cake.  It is a great workout for your arms.  You need a super big bowl like the big bear’s bowl in Goldilocks or maybe bigger.  A couple of wooden spoons.  12 inch cake tin.  Ingredients at room temperature before embarking on the cooking experience.  A slowly cooking oven.  Preheat to 120 degrees celsius or 250 degrees fahrenheit.

550 grams butter

550 grams caster sugar

550 grams currants

550 grams sultanas

550 grams raisins

220 grams dates

110 grams peel

110 grams cherries

50 grams almonds

700 grams plain flour

150 grams self raising flour

15 eggs

2 teaspoons of mixed spice

1 teaspoon of nutmeg

1 dessertspoon of vanilla essence

Grab that huge bowl and put all ingredients in, mixing with a fork as you go.  Use the wooden spoons and keep mixing until all ingredients are combined.  Prepare the cake tin with olive oil or other cooking spray and cut a baking square to fit perfectly in the bottom of the cake tin.  Place mixture into tin with a spoon and put in the bottom tray in the oven.  Cook for 21/2-4 hours check after two 1/2 hours.
