Chocolate Brownies – Yum.

Chocolate Brownies

250 grams butter

200 grams brown sugar

3 eggs

150 grams dark chocolate broken into pieces

100 grams roughly chopped almonds or macadamia nuts

50 ml vegetable oil

50 grams cocoa

1 teaspoon baking powder

1 teaspoon vanilla essence

1 cup plain flour (sifted)

A pinch of salt

Preheat oven:  160 degrees celsius or 320 fahrenheit

Method:  In an electric mixer, cream half the butter with the sugar until light and fluffy.  Add eggs one at a time and beat until light.  Stir in vanilla.  Place remaining butter and chocolate in a heatproof basin over hot water and stir until melted, (can also be done in a microwave).  Fold in oil.  Cool, then combine well with creamed butter and sugar mixture.  Gently fold in sifted flour, cocoa powder, baking powder, salt and nuts.  Line a greased shallow cake tin about 23 cm x 23 cm with baking paper.  Pur batter into prepared tin.  Bake in a preheated moderate oven 160 degrees celsius or 320 fahrenheit for around 30-40 or until a baking skewer in the centre comes out clean.  Allow to cool in the tin and cut into squares to serve.
