Patio Chicken

This is one of my favourite quick and easy recipes to use when you holding some sort of party or shindig.  It is a great easy recipe and tastes delicious.   If you are having to do a lot of catering it makes a perfect dish to serve.  You can place it on a large white bowl with a couple of rosemary sprigs on top and it looks fabulous.   It earned its title in a very funny way.  I just made up the recipe and when we had our engagement party the caterers asked what dish is this?  I looked out on the patio, deck, verandah and just replied Patio Chicken and that is how it was named.

24 or more or less chicken legs depending on numbers (I allow 4 each – on the generous side)

Olive oil

1 jar of plum sauce

1 jar of organic mayonnaise

Fresh mixed herbs

Garlic

Sea Salt (maldon or similar)

Cracked Pepper

Large Roasting Pan

Preheat oven 160 degrees celsius or 320 degrees fahrenheit

Pour olive oil on to the roasting pan until it is fully covered.  Place chicken legs inside.  Sprinkle with sea salt, cracked pepper and mixed herbs.  Cut up garlic and place bits of the cloves throughout the chicken pieces.  Using a knife spread the mayonnaise and plum sauce all over the chicken legs (generously).  Bake in 160 degrees celsius or 320 degrees fahrenheit for about 20 minutes either side or until cooked.  Turn the chicken halfway through cooking.  Place the roasting pan at the bottom of the oven.
