Chocolate and Coconut Fudge Cake

A small and ravishing piece of chocolate and coconut.  Nothing like a light feathery cake to see you through a cold and windy winter’s day or just for those days when something resembling chocolate is called for.

1/2 cup of organic butter

1 teaspoon real vanilla or vanilla essence

1 cup desiccated coconut

1/2 cup caster sugar

1 cup self-raising flour

1 tablespoon cocoa

Take out a medium sized saucepan slowly heat and boil the butter, sugar and vanilla.  Add all the rest of the ingredients.  Take off heat and mix together until smooth.  Flatten into a square cake tin.  Bake in a 175 degrees celsius or 350 degrees fahrenheit oven for approx 8-10 minutes.  Ice with chocolate icing while still hot.  Cut into squares when cool.
