Baked Vegetable Pie

This pie is so delicious.  I just made it up one day and it was an instant hit.  Throwing bits of pieces in and stirring around spices and presto – it worked.  LOL.  Here goes it is quick, you can have it on the table in under 40 minutes.

2 medium onions

2 carrots sliced

2 zucchinis sliced

1 and 1/2 cups wholemeal breadcrumbs

Just over a handful of quality shaved parmesan

2 ready made puff pastry sheets

Cumin seeds, cumin powder, ginger powder, garamassala, curry powder, turmeric

Quality Vegetable Stock

3 potatoes

1 or 2 sweet potatoes

1 tin organic chickpeas

1 cup organic frozen peas

1 cup organic frozen corn kernels

Himalayan crystal sea salt

Nuttelex or organic butter

Method:  about halfway through putting all these ingredients together preheat your oven to 180 degrees celsius or 360 degrees fahrenheit.  Take out a medium-sized non-stick fry pan and pour some olive oil in.  Then add 2 medium onion diced onions or finely chopped.  Cook until slightly brown and then add chopped up carrots, organic frozen peas, organic frozen corn kernels, sliced zucchini and a tin of organic chick peas (drain 3/4s of the water out of the tin before using).  Then add cumin seeds, 1 and a half teaspoons of cummin powder, turmeric, garamassala, ginger powder and two teaspoons of curry powder.  Mix all ingredients in the pan.  Massel vegetable stock and put two heaped dessert spoons in a cup, boil the jug and fill the stock with 3/4’s of the boiling water from the jug.  Then mix.  Add into frypan.  Bring to the boil then cover, simmer on low heat for around 15 minutes.  Take out a medium-sized saucepan and boil the potatoes and sweet potato until soft.  Mash together with nuttlex or organic butter and some Himalayan Crystal sea salt.

Take out pie dish.  Place pastry on the bottom.  Pour in all ingredients from the frypan.  Place a layer of shaved parmesan on top.  Then cover the whole dish with the potato and sweet potato mash and then add a layer of wholemeal breadcrumbs.  Place another piece of pastry over the whole dish.  Use a fork to push the sides together and kitchen scissors to cut off extra bits of pastry.  You can also use the fork to make holes on top of the pie in a sequence for decorative purposes.  Then take out pastry brush and wipe water over the top of the pastry.

Place in a preheated oven on 180 celsius or 360 degrees fahrenheit for around 30 minutes.

Really tasty served with a bit of organic tomato sauce and aioli.
