Vegetarian Carrot and Macadamia Loaf
Vegetarian meals are so versatile and quick to make. They are great to add as back up dishes at dinner parties. Here is a taste of some of my vegetarian meals. This dish will feed up to twelve ravenous people. You can substitute the macadamias for walnuts if you like.
4 celery long stalks
Mortar and pestle 2 cups of macadamia nuts
4 brown onions
3 dessert spoons of cold pressed olive oil
2 cloves of garlic, peeled and crushed
2 cups of wholemeal breadcrumbs
fresh parsley about a handful
organic or free range eggs – 4
Himalayan crystal sea salt
Method: use a grater or food processor that grates and then combine carrots, celery and onion. Put the rest of the ingredients in and mix together. Take a sheet of baking paper and cut so it covers the top of the dish before placing in the oven. Put all the ingredients into an olive oiled baking dish for around 40 minutes at 175 celsius or 350 fahrenheit. Serve with lots of condiments tomato sauce and other creamy sauces like caesar dressing or creamy salad dressings. Cracked pepper is also tasty on top.
