Vegetarian Curried Chickpea half pie

Last night I wasn’t in the mood for cooking.  Highly unusual as cooking, baking and food in general is a major passion.  So I looked in the pantry and picked out a can of organic chickpeas mainly because I had three and thought I should use one.  Then I grabbed an onion.  Sliced it up put it in a medium-sized frypan with a couple of good splashings of olive oil.  Watched it cooking until it was slightly golden, stirred it a couple of times with a wooden spoon.  Added the chickpeas after draining the juice out.  Tossed in some organic frozen peas, corn, and some mahatma brown rice around half a cup uncooked.  Put in a couple of teaspoons of curry powder.  Took out some Massel tinned powdered stock put in a heaped tablespoon of chicken stock into a cup and the same again with vegetable stock.  Boiled some water added about 2/3rds of a cup of boiling water and stirred until dissolved then added to the frypan.  Brought the mixture to the boil and then put on low heat, covered and simmered for around 15-20 minutes.  While that was cooking I took out a saucepan filled it with some water threw in four peeled potatoes and cooked until the potato was soft.  Mashed up the potato with some nuttelex and put in around a teaspoon of himalayan crystal salt mixing thoroughly.  Then I placed all ingredients from the frypan into a pie dish, covered with the mashed potato and placed one slice of store brought puff pastry on top and rolled down the edges to give it a pie look. 🙂  Then I used a fork to make a little square pattern in the middle.  Took out my pastry brush and wiped some water on the pastry.  If you lose the pastry brush or don’t have one, the beauty of using water is you can just get a paper towel and gently wipe some water over the surface of the pastry.  Baked in a preheated oven 180 degrees celcius or 350 degrees fahrenheit.  Around thirty minutes later the crust was browned and to my absolute surprise it was a really tasty pie.  My husband commented on how delicious it was.  I took a couple of  photos of the pie after we had been eating it.



Cold pressed Olive Oil

1 large onion (brown)

1 can of organic chick peas (drained)

1/2 cup of mahatma brown rice uncooked

1 tablespoon of massel powdered chicken stock

1 tablespoon of massel vegetable chicken stock

2 teaspoons curry powder

2/3rds cup organic frozen peas

2/3rds cup organic frozen corn

4 medium sized potatoes

2 tablespoons of nuttelex or organic butter

Himalayan crystal salt

1 layer of store brought puff pastry
