Banana Clouds

Banana Clouds – yummy dessert for the kids and the ‘big’ kids

This is comfort dessert if you like bananas.  Very quick and tasty.

6 cavendish or lady finger bananas

cinnamon and castor sugar mixed (around 1 teaspoon of cinnamon to 1 tablespoon of caster sugar)

lemon juice (1 teaspoon)

light cream

water (3 tablespoons)

organic butter or nuttelex

Take out a baking dish butter the insides.  Slice the banana lengthways.  Place inside.  Evenly sprinkle with the cinnamon and sugar mix.   Mix the lemon juice with three tablespoons of water in a cup.  Pour this over the mixture.  Place in an oven at 160 degrees celsius or 320 degrees fahrenheit for ten minutes.  Then increase to 180 degrees celsius or 356 degrees fahrenheit.  Bake for another ten minutes.  Serve in bowls poured with fresh cream.  Tip:  If you want to spice the dish up add fresh strawberries, blueberries and mix some icing sugar into the fresh cream.
