Low sugar and low fat Rum Balls
20 crushed wheatmeal biscuits or 10 weetbix or 10 weetabix
8 teaspoons cocoa
150 grams ricotta cheese
3 tablespoons unsweetened apple juice
2 tablespoons rum or rum essence 1 teaspoon
1 teaspoon vanilla essence
Method: Mix all the ingredients together except the coconut. Roll into balls about 1/2 size of a golf ball and then cover in coconut.
