White Christmas Two

Always a special sweet treat amongst Christmas fare.  Very sweet and sugary so one is probably enough in amongst all the other Christmas sweet treats to consume.  If you have guests arriving or a lot of people to visit.  This doesn’t take very long and cut into either Christmas shapes using a sharp knife or into biscuit/cookie squares makes an easy good to go treat to share with many.


500 grams Copha

1 cup skim milk powdered milk

2 cups rice bubbles

1 cup pure icing sugar

1 cup mixed fruit

1 cup dessicated coconut

2 teaspoons of vanilla essence

1/4 cup chopped up glazed cherries

Take out a bowl, a saucepan and a baking tray line it with foil.  In the bowl mix the milk powder, icing sugar, mixed fruit, rice bubbles, dessicated coconut, vanilla essence and chopped up cherries together.  Melt the copha in the saucepan and add it slowly a bit at a time to the ingredients in the bowl (it is ready when it is like a scrambled egg mix).  Mix it all together until smooth and well blended.  Pour the whole mixture into the bowl and leave to set in the refrigerator.  Approximately two and a half hours.
