Christmas Pudding with Butterscotch Sauce   – No baking  

A lovely pudding with ice cream and butterscotch sauce.   Even after you have eaten enough for the entire year on Christmas Day 🙂  There maybe room for this.                                                            


½ cup chopped raisins

½ cup sultanas

1/3 cup mixed peel, finely chopped

1/3 cup glazed cherries, chopped

¼ cup brandy

¾ cup chopped nuts of choice, lightly toasted

1 ½ teaspoon mixed spice

2 litres vanilla ice cream (good quality)

Butterscotch sauce

125 grams butter

1 cup caster sugar

1 small apple, peeled, cored and sliced

1/3 cup fresh orange juice

¾ cup chopped toasted nuts

For the Pudding:  Combine fruits, sprinkle brandy over and leave to soak overnight.  Add nuts and mixed spice to fruits.  Fold into softened ice cream.  Line a 6 cup pudding basin with plastic wrap and fill with the mixture.  Cover with plastic wrap and freeze overnight. For the Sauce:  Melt the butter, mix in the sugar and apple, gently cook for about 12 minutes or until sauce turns a caramel colour, stirring frequently.  Add orange juice and cook further 10 minutes or until sauce coasts back of a spoon.  Stir in nuts and allow to cool before serving.
