Sweet Potato, Potato and Walnut Bake
Don’t you just adore simple recipes where you don’t have to spend hours in the kitchen or hours putting together 1/2 teaspoon of this or that especially when you are running around after a family. This is so easy the only thing it does require is quite a long time baking time to taste sublime. You have to bake it for up to 2-3 hours so start early and get that kitchen timer going.
8 thinly sliced potatoes (a mixture of sweet and white)
4 sliced onions (you can use brown and spanish for a mixture if you desire)
2 teaspoons cumin seeds
Chopped up walnuts (enough to cover around a 3/4 layer)
Himalayan crystal salt
Wholemeal or Plain flour
Rice/Soya/Almond or Cow’s milk
Take a deep baking dish and cover it with butter. Layer the dish with the potatoes, sweet potatoes, walnuts, onions, salt and pepper, 2 x teaspoons cumin seeds and a scoop of flour. Make sure the last layer is potatoes. Pour milk over the mixture around 3-4 cups or just so the whole baking tray is full. Bake at 120 degrees celsius or 250 degrees fahrenheit for 2-3 hours.
