This is a quick easy lunch for eight people or more depending on the size. Half the mixture for four people.
Sweet and Sour Cod (fish)
3 cups of pineapple pieces (chunks from a tin) or fresh (if fresh also buy a tin of pineapple juice)
2 and 1/2 teaspoons of cornflour
1 cup hot tap water
4 teaspoons of salt reduced soya sauce (wheat free)
2 and 1/2 cups of green peppers/red peppers
3 teaspoons of sesame oil
3 teaspoons of free range or organic unsalted butter
1/4 cup organic raw sugar or stevia – 1 dessertspoonful
1 cup massel chicken stock
1 tablespoon of white vinegar
1 teaspoon Himalayan crystal sea salt
approximately 500 grams of cod (cut into small pieces and cooked)
basmati rice or jasmine rice or rice noodles
Take out a saucepan or wok, mix sugar, cornflour together. Mix in stock, hot water, vinegar, pineapple syrup from the pieces, soya sauce and salt. Stir together on medium temperature until the mixture thickens. Add pineapple pieces, peppers, fish, butter and sesame oil. Simmer for 5 minutes until all heated. Stirring when needed. Serve with basmati rice or jasmine rice or rice noodles.
