Nutmeg Biscuits/Cookies

Biscuits and cookies are so quick to make a little effort at the beginning. The baking time makes it all worth while and without too many ingredients it always helps. You can use either sultanas or raisins. Currants are probably too big and chunky for this one.


185 grams of organic unsalted butter/and or Nuttelex or other margarine or just over 2/3rds of a 250 gm block.

250 grams of plain flour (2 cups)

2 teaspoons of baking powder

1 teaspoon of nutmeg

250 grams of caster sugar (1 cup)

90 grams of sultanas or raisins (1/2 cup)

2 organic or free range eggs (beaten)

Method:  take out a large mixing bowl, cut the butter into cubes or use the margarine as is.  Combine the flour, baking powder and nutmeg separately and sift into the mixing bowl.  Rub the butter or margarine into the mixture until it becomes like a fine breadcrumb mixture.  Add the sugar and sultanas and stir mixture together.  Add the eggs and mix well with a wooden spoon or on low with an electric beater.  Grease your baking trays.  Place small balls of mixture with room to spread out on the trays.  Use a fork that is slightly wet and press them down.  Cook in a hot oven 190 degrees celsius or 375 degrees fahrenheit for approximately 10-15 minutes or golden brown.  Once ready place on a cooling tray.   Makes around 40 biscuits/cookies.
